Organic food and the Slow Food movement confirmed my passion for seasonal produce and whilst representing the UK at the Terra Madre in Turin in 2008 I was heartened to meet so many like minded lovers of food, chefs and producers alike.

 - I have been buying fish from New Wave for 10 years. They have always delivered quality fresh fish. They are a reliable, friendly company where nothing is too much trouble. When I launched my private dining venture, Chef Paul Collins in May 2011 there was no question that I wanted New Wave to continue supplying me.  

In 2003, Paul moved to the Cotswolds and was part of the launch team at Daylesford Organic. He was Executive Head Chef there for 7 years and oversaw all food production in Gloucestershire and London.   He also setup the first two franchises in South Korea and Munich.  Under Paul’s management the organic café at the Gloucestershire site was awarded a Michelin Bib Gourmand in 2009 and 2010.
