When you’re the former chef and ex vice-captain of the Welsh Culinary Team, previous President of the Culinary Association of Wales, World Association of Chefs judge, ex food lecturer, food consultant to the Welsh Assembly Government and; when you’ve founded, run and sold a successful patisserie company; when you are running one of Wales’ top catering operations and provide a restaurant and take- away at every major open-air event in Wales, it’s surely time to start winding down.
